Each recipe is modified to reduce sodium, potassium and phosphorus. One of my favorite appetizer recipes is Artichoke Relish on Toasted Pita. It’s lower in sodium compared to most appetizers. Plus one serving provides a half-portion of vegetables! Another favorite for pot-luck holiday celebrations is Lemony Couscous Salad with Cranberries. This dish serves 10 people, features 3 low-potassium vegetables and dried cranberries for a bit of tart and sweet.
