A few years ago when I was traveling around the country, I bought a cookbook from every city I visited. I love reading the recipes and learning more about the favorite foods from each area. I was really excited when our cookbook team decided to do a cookbook with recipes from across the United States. Today I’m excited to share the DaVita.com Today’s Kidney Diet: Tastes of America cookbook with you.

Our dietitians/recipe developers each took regional recipes and modified them to reduce the sodium, potassium and phosphorus, yet keep the original ingredients and flavors of each dish. In this collection you will find All American Mini S’mores Pies, Louisiana Shrimp and Crab Gumbo, Maryland Lump Crab Cakes, Michigan Cherry Oat Bars, Southeastern Pinto Beans Seasoned with Ham Hock, Virginia-Style Brunswick Stew, plus 8 additional regional recipes.

One of my favorite recipes is the All American Mini S’mores Pies. With only 4 ingredients, this simple dessert is broiled in the oven or toaster oven for just 1 minute. Plus, it tastes like the S’mores you toast over a camp fire.
