Celebrate July 4th and Summertime

Hi everyone! Hope you have been able to get out and enjoy the wonderful warmth of summer. Here in Minnesota, it’s difficult not to try and soak up every minute of warm  summer sun we are given.

Summer just screams cold desserts. Ice cream cones. Malts. Fruit smoothies. Fresh fruit pie. But when you’re following a renal and/or diabetic diet finding desserts that fit into your eating plan is challenging.

I set out to find delicious desserts that are kidney and diabetic-friendly. I came across so many refreshing summertime desserts. Here are a few of my favorites, approved by my husband and three kids too!

All the recipes are so delicious but the Red, White and Blue Pie is my favorite PieRWBslice-662dessert so far. It is served cold and is absolutely delicious. It contains only 6 ingredients and really took no time at all to put together. My kids loved helping by placing the berries on top of the pie. Leftovers (which I doubt there will be any if you are serving to guests) can be frozen.

It is a great dessert to serve on the Fourth of July with all the beautiful colors- it is so pretty and festive. This pie is sure to please everyone at your next celebration.
