We’ve modified 14 street foods to fit a kidney-friendly diet by reducing sodium, potassium and phosphorus. Cookbook Team
Some of the things our cookbook crew discovered during recipe development includes how easy it is to make falafel—and how many ways to eat them. We also learned how to fold egg roll sheets for the Filipino Banana Rolls. No worries–each roll contain only 1/3 piece of a banana to keep potassium low. Also, we learned about hard cheeses used in Colombia and Mexico, and how a small amount can pack lots of flavor.
During our photo shoot we had fun creating a street food look for the Falafel recipe. We were thrilled with the grill marks on the Mexican Street Corn and Jamaican Jerk Chicken. But the best part was sampling the street food recipe leftovers after our photographer picked the best selections to shoot.
