I’ve seen a lot of recipes that has non-dairy creamer in it. What does that actually do in the recipe and could you just not put it in the recipe?

Non-dairy creamers have been used as a milk substitute in the kidney diet because of the lower potassium and phosphorus content compared to milk and cream. Due to the ever increasing use of phosphate and potassium additives these nondairy creamers are not always the best choice for a substitute. Always read the ingredient list and compare brands. They ussally do not give you the potassium or phosphorus content on the label.
